rice pudding

i have been wanting to do rice pudding for a while now. i think since i saw the post on novaclutch by my friend natasha. it was one of her first posts and it seemed like a dish that will make me warm and happy on a lazy weekend morning. Fall came, and with it the pudding. i loved eating it warm. we ate it twice, once as breakfast, which was too sweet as a sole meal, and the second time as a dessert which was just right. i have wrote 2 sugar options in the recipe; as a meal and as a dessert.

INGREDIENTS
2 quarts whole milk
1 cup white rice (any white rice)
1 cup sugar (as dessert)
OR
1/2 cup sugar (as a meal)
2 cinnamon sticks
2 tbs unsalted butter
1 tsp vanilla or vanilla extract
1/4 tsp salt
handful of crushed pecans

PREPARATION
bring milk, rice, sugar, cinnamon sticks, butter, vanilla, and salt to boil in a heavy saucepan. once boiled reduce heat and simmer uncovered for about an hour, till rice very tender. stir frequently.
pour into bawls and sprinkle with the pecans.
can be served hot or cold.
