vanilla snap biscuits

so now that i have my perfect vanilla extract it was only natural that i will start using it. what could be a better way to roll out my extract than with simple, easy and delicious vanilla biscuits? perfect with tea or coffee.

6 oz (185g) butter, chopped
1 cup sugar
vanilla sugar*
2 tsp vanilla extract
2 1/2 cups all purpose flour
1 egg

process the butter, sugar and vanilla extract in a food processor until smooth.
add flour and egg and process till combine.
remove the mixture and wrap with plastic wrap.
refrigerate the dough for 30 minutes or until firm.
preheat oven to 350 F (180 C).
arrange baking trays with with non-stick baking paper.
roll out the dough on a lightly floured surface until 1/4 inch thick.
cut the dough using a cookie cutter.
place on baking trays.
sprinkle biscuits with vanilla sugar.
bake for 10-13 minutes or until the biscuits are golden on their bases.
cool on the trays.

vanilla sugar:

1 vanilla bean
1 cup
granulated sugar
slice down side of bean with back of knife and scrape seeds into airtight container with the sugar. shake well till combined.
use as regular, granulated sugar.
