simple salad



on these hot days i find myself preparing cold and easy to make dishes; many of them are salads. this salad is especially easy to make, delicious and nutritious so here goes. what i usually do, is make a nice amount of the dressing, store it in a jar, refrigerate it and use it for the rest of the week. i like to mix boston bib, red leaf, and arugula lettuce, cut them roughly with my hands, wash and dry them and store them until its all used up, or go bad, whichever comes first. talk about being lazy.

in this recipe i sprinkled the salad with sautéed pecans i prepared earlier. feel free to use any kind of nut, such as sliced almonds or pine nuts. regarding the cheese, again, i vary between feta, bulgarian feta, mozzarella and parmesan cheese, so use your imagination. you cannot go wrong with this salad.



INGREDIENTS
nuts:
4 tbs butter

2 cups preferred nuts such as pecan, almonds and so on
salt

dressing:
1 shallot finely chopped
1/4 cup good balsamic vinaigrette i use modena giuseppe giusti
salt and pepper
2/3 cup olive oil
1/2 cup fresh lemon juice

salad:

roughly cut and washed lettuce combined together.

PREPARATION
nuts:
melt the butter.
add the salt and nuts and cook till golden brown.

dressing:

combine onion, balsamic vinaigrette, salt and pepper, olive oil and lemon juice in air tight container.
shake well.
keep refrigerated.

serving:
in a bowl combine gently with your hands your lettuce with the dressing.
important, put only few tbs of the dressing not the whole thing.
transfer to plates, sprinkle with nuts and cheese.
